Banana Chocolate Chip Coconut Muffins

You've found it! This is the recipe that will brighten any gloomy day and warm your belly with its yummy goodness. You can easily exchange the chocolate chips and/or coconut for walnuts if you want to mix it up. Bonus: the smell of these delicious muffins will fill your home for hours. Who needs scented candles when you have have the real thing?!



Ingredients:

1 cup mashed ripe bananas (3-4 ripe bananas)

5 Tbsp unsalted melted butter

1 1/2 cups all-purpose flour

1/2 cup sugar

3/4 tsp baking soda

1/4 tsp Kosher salt

1/2 tsp ground cinnamon

1 tsp vanilla extract

1 large egg

1/2 cup semi-sweet chocolate chips

1/2 cup unsweetened shredded coconut


Recipe:

  1. Preheat the oven to 350°F.

  2. Combine flour, cinnamon, salt and baking soda in medium bowl.

  3. Combine mashed bananas, melted butter, sugar, vanilla extract and egg in separate large bowl.

  4. Add dry ingredients to the wet ingredients. Avoid over mixing.

  5. Fold in coconut and chocolate chips

  6. Grease 12-cup muffin tin and fill evenly with batter.

  7. Top each muffin with sprinkle of shredded coconut (consider a sprinkle of raw sugar if available).

  8. Bake for 22-28 minutes (depending on your oven). Muffins should be golden brown on top and toothpick should come out clean in muffin center.
